Roll out the red carpet. Renowned Birmingham chef and Frederick Street fave Niki Astley is moving in permanently to our kitchen – and we couldn’t be happier.
For time immemorial Niki Astley and Georgiana Radenschi have been driving the foodies of Brum into a frenzy. First, at their highly-rated dining spot in the Jewellery Quarter Two Cats Kitchen, then at pop-ups across the city and beyond. We’ve always welcomed them back to our kitchen with open arms and an empty plate and this time we’re mad with excitement that it’s on a permanent basis.
Niki will be bringing an evolving menu of small plates to suit all tastes and overseeing an occasional series of pop-ups and collaborations from some of Birmingham’s best up and coming chefs throughout the year. Basically, all the good stuff.
August will see the talented chef serve up dishes such as crisp fried chicken with a burnt lemon curd, rolled beef brisket with wasabi, and bone marrow fried rice with leek top pesto. Mouthwatering.
Speaking about returning to the 1000 Trades kitchen, Niki said:
“We’re excited to be deepening our relationship with 1000 Trades by moving in permanently to the kitchen. We’ve decided to take what we’ve learned are successful dishes and adapt our format to fit a wider clientele.”
“We’re creating menus that are delicious, familiar and exotic at the same time. We’ll also be offering a selection of bar nibbles, artisan cheeses and charcuteries alongside our current format of small plates.”
Stay tuned for details of pop-ups and events in the coming months. You can see the August Salt & Earth menu, serving lunchtimes and eveninngs from August 7th, here.
