We’re excited to announce that our second kitchen residency will run from 15 to 20 August by Salt & Earth, the new venture by Niki Astley, founder of Two Cats, the renowned Jewellery Quarter eatery.

Two Cats Chef-Director Niki Astley said:
“Two Cats was an amazing project that started as a popup and became a wonderful restaurant but we have always served a tasting menu. This always left me a little wanting; as good as tasting menus are they do not lend themselves to a neighbourhood restaurant feel. I want to do something versatile that can be dropped into for an hour after work or have you stay all night.
“Also the cuisine limits what can be put into each dish through tradition. As much as I love Baltic Russian food, I miss spice, avocados, lime and so forth – it’s as much my personal and culinary background as anything else, so I wanted a place that I could bring it altogether in an interesting way.”
Two Cats opened to wide acclaim, being reviewed in the Guardian by Marina O’Loughlin as: “moving Brum from the Balti to the Baltic, brilliantly.” It was also listed in the Times 25 top coolest restaurants in late 2015.
Salt & Earth will be serving a series of small dishes from £3 to £9 of vegetable-meat-ﬁsh-sweet and bring together inﬂuences from Asia, Latin America and the US, somehow put through the ringer of the chef who brought Birmingham New Baltic Cuisine. Teasers from the menu include beef noisette, purple potato, prawn butter sauce & coriander oil, and smoked black garlic pork cheek, steamed bun and kimchi.
It kicks off at 5pm on Monday 15 August, running from from midday till 3pm, and 5pm till 10pm on subsequent days. Saturday 20th August will be the last day of the pop up.
