The time has come to return to our roots; the pop-up kitchen is back!

From 8 June, our small but perfectly formed kitchen will be showcasing some of Birmingham’s finest food traders and restaurateurs with bi-monthly residencies, bringing you a taste of the second city’s thriving food scene.

First to take over the reins is previous incumbent Blu Magic, founded by Birmingham-based chef Matthew Knight cooking up delicious plates with a Caribbean twist – fusing the great flavours the Caribbean has to offer with influences and tastes from around the world. Last time Matthew wowed us with his creativity and quality, and we’re really looking forward to him bringing it home again.

Expect small and large plates loaded with flavour; 24hr marinated jerk rump steak with fried baby crab claw or sticky steamed Asian baos with fried plantain, avocado and Feta Cheese. Mississippi fried chicken and crayfish curry to mango and passionfruit cheesecake.

Matthew said:

“Life growing up was never easy and why should it be? I have had my fair amount of stressful times but somehow find myself thinking of how I can make things better. I spent half of my life looking for the next best thing that was going to make me happy. I have been very fortunate to have worked alongside some great chefs and have cooked for some well- known household names now I am looking to become that household name hence how Blu Magic Food was founded. I had a lifelong goal, to put a twist on Caribbean food by putting my own interpretation and style onto a plate.

“I am often asked: what exactly is Caribbean cuisine? What are the defining flavours influences and origins? Why is that so many people haven’t yet tried it? The answer is diversity. By infusing a touch of the Caribbean into the food, you’re taking a simple thing like a Chinese Duck Spring Roll and turning it into a Jerk Chicken and Feta Cheese Spring Roll. I am dedicated to introducing people to a new way of experiencing Caribbean food. I pride myself on fusing the great flavours the Caribbean has to offer with influences and tastes from around the world.”

Matthew will be serving from 5pm Mondays to Fridays and all day Saturdays, with the Trader Kitchen POSH Sandwiches available as normal during the day Tuesday – Friday lunchtimes (12-3pm).
