Zero waste with incredible taste. Slow Food Birmingham is taking over 1000 Trades to mark international Zero Waste Week from the 3rd to 8th September.

A special week of menus arrives on Frederick Street, with members and supporters of Slow Food treating diners and tantalising the tastebuds. Using forgotten cuts, foraged and surplus food as the starting point, some of Birmingham’s best chefs will be showcasing just what is possible with a bit of ingenuity.

Slow Food Birmingham’s Kate Smith said:

“Diners can look forward to a huge variety of dishes over 3-4 courses created with the verve of Ready Steady Cook and the passion and flair of Masterchef. Being true to the concept of ‘zero waste’ means much of each guest chef’s menu will be created on the day – but by working with some of the best talent in Birmingham we aim to show that creativity can be used to produce food that will wow the senses as much as any fine dining restaurant.”

The Real Junk Food Project (Monday) A Taste of Waste

TRJFP Brum has been operating since 2014 – rescuing over 15 tonnes of waste food and serving over 2,000 meals every month. The project intercepts food that would otherwise go to waste from supermarkets, restaurants and other sources; turning it into healthy, nutritious meals for all. ChangeKitchen (Tuesday) Pan-Asian Vegan Food Journey

Offering innovative vegetarian and vegan menus at both their pop up café and also catering events in Birmingham and beyond. founder Birgit cooked with Slow Food Youth Network Brum at their Disco Soup earlier this year and will be showcasing their delicious, nutritious and ethical dishes that can be shared and enjoyed by all. Kitchen Supper Club (Wednesday) Found: A Three Course Wild Dinner Sourced in Birmingham

A not for profit Kitchen School founded in the kitchen of Jayne Bradley in 2014 and recently established with their own premises in Digbeth, with classes led by some of Birmingham’s best chefs, home cooks, suppliers and producers and aimed at eager homecooks, beginners and disadvantaged Birmingham residents. With zero food miles and no supply chains involved they celebrate everything that can be found in Birmingham. Jayne and Chris are challenging us to think about where our food comes from. Artisan Epicurean (Thursday) Four Course Italian Inspired Menu

Slow Food member Suzanne runs Artisan Epicurean bespoke personal chef services, offering beautifully inspired and unique menus at home with the emphasis on ethically sourced, seasonal & home grown produce. Drawing inspiration from her Italian grandmother Suzanne will be using surplus artisan bread and other delicious ingredients to create four courses of Mediterranean sunshine on a plate. artisanepicurean.co.uk £34, four courses

Ox & Origin (Lunch and dinner Friday and Saturday) Seldom Seen, Not Easily Forgotten

Travelling chefs Josh and Mike have previously wowed diners at 1000 Trades with their skillfully crafted plates of fancy. Most of the time they travel around the country taking care of private catering events both big and small but they will be moving back in for two days to create delicious dishes from some of the ignored or less used ingredients around today. ox-and-origin.com £25, three courses.
